Finessa Salad with broccoli

Ingredients (2 servings):
1 pack of salad mix Veggieland "Finessa"
1 pc. broccoli
1 pc. peas (canned)
1 pc. tomato
6 Tbsp Croutons
4 Tbsp of dressing

 

Ingredients for the dressing:
2 tomatoes (small)
12 Tbsp olive oil
½ onion
4 cloves  garlic
1 tsp apple cider vinegar
1pc. red pepper
50 g Parmesan
½ tsp white pepper

 

How to prepare:
  1. Cut the tomatoes (in boats), the onion (half-moon shape), garlic (in chunks) and fry until golden. Let it cool.
  2. Bake the red pepper.
  3. Pour the fried vegetables, red pepper and olive oil in a cylindrical cup. Blend it all, add vinegar, white pepper and Parmesan cheese. Blend again. Store in the refrigerator.
  4. Tear the broccoli into small pieces and blanch them in boiling salted water for 3-4 minutes, then place them in cold water. Dry them.
  5. Cut the tomato into cubes.
  6. Pour the salad mix and 3 tablespoons of dressing in a large bowl, then stir.
  7. Add the remaining ingredients and dressing and stir again.
