Baby Salad with noodles

Ingredients (2 servings):
1 pack of salad mix Veggieland "Rocket and Spinach - Baby Leaves"
50 g rice noodles
1 pack of prosciutto/Jamon
1 pc. cucumber
1 pc. carrot
300 g mushrooms
50 g Parmesan
5 Tbsp of dressing

 

Ingredients for the dressing:
2 pcs. tomatoes
12 Tbsp olive oil
½ onion
4 cloves garlic
1 tsp apple cider vinegar
1pc. red pepper
50 g Parmesan cheese (grated)
½ tsp white pepper

 

How to prepare:
  1. Cut the tomatoes (in boats), onions (in half-moon shape), garlic (in chunks) and fry until golden. Let them cool.
  2. Bake the red pepper.
  3. Pour the fried vegetables, red pepper and olive oil in a cylindrical cup. Blend the mix, add vinegar, white pepper and Parmesan cheese. Blend again. Place in the refrigerator.
  4. Break the noodles in shorter strips and cook according to their instruction then drip and let them cool.
  5. Cut and fry the mushrooms.
  6. Cut the carrot and cucumber into thin strips.
  7. Pour the salad mix, vegetables and noodles in a large bowl and mix with the dressing.
  8. Sprinkle with Parmesan and top with the shredded prosciutto /Jamon.
